Whole bunch pressing, wild ferment in new French oak have come together in spectacular fashion. The wine was fermented in 30% new French oak and the balance older, from a variety of cooperages.
The Indigo property has different soils, aspect, clones and vine age, but it is another great example of what this region can do for Chardonnay. We have minimum winemaker input to let the regional characteristics shine through.
Sufficient winter rainfall in 2017 saw the vines off to a good bud burst and then 55mm of rain in early December was very welcome.
Particularly as temperatures had stared to climb with highs of 34C and then 35C in December being reached. January 2018 saw a top temperature of 40.7C tempered with a much needed 70mm of rain towards the of January. Harvest progressed under clear blue skies.
Seafood and light meats.
Drinking well now but will improve with further bottle age.
