Harvesting all by hand. The fruit was crushed, chilled and pressed immediately. Neutral yeasts were used for the fermentation, bottled in July. No oak and no malolactic ferment, only stainless steel.
The winter of 2011 saw more consistent rain than previous years with each month from April 2011 getting above 60mm and June just on 120mm. Rain in the last 3 months was 310mm so quite a wet spring and start to the growing season. Warm, dry weather followed through to Christmas and into the New Year but thankfully not the 40-45C days of 2011.
The Trevena Vineyard is located on Hermitage Road, sitting between Braemore and Tyrrell's HVD Semillon Vineyards and forms part of the 'dress circle' of prestige Hunter Valley Semillon.
This Semillon was planted in 1920 and the soil is desiccated calcareous, so quite chalky/talcy and also deep draining. Perfect for Semillon. Style wise, always great purity with lime juice acid and talc notes.
Asian food, any seafood especially freshly shucked oysters.
Drinking well now but will improve with further bottle age.
