Vinification
Machine harvested, and fermented in a combination of open and roto-fermenters. Not overly pumped over, as soft tannins are required.
Maturation in 100% French oak.
Winemaker Comments
The 2021 vintage in Gundagai is an excellent season following 4 years of drought. Good canopy growth saw a return to near average tonnages. Favourable ripening during February led to fruit in great condition at picking.
