The grapes were crushed and cold soaked before fermentation for
4 days. Brokenwood winemaking is about soft extraction giving
beautifully balanced tannins. The wine was matured in 100% French oak for 18 months with 30% being new.
Brokenwood Wines previously included Margaret River Cabernet Sauvignon in blends with the first in 1983. Wildwood Road connects Caves Road at Yallingup on the coast to inland Carbunup and is the home to a number of high quality vineyards. Vintage 2016 continued Margaret River’s golden run of great vintages. Plentiful winter rain in 2015 and then a fine spring and early summer. Parts of the district had rain in January/February but Yallingup produced excellent Cabernet Sauvignon.
Pairs well with steak tartare, carpaccio or lamb dishes.
Drinking well now but will improve with further bottle age.
